A fun, portable twist on the classic Greek salad, featuring skewered fresh vegetables, olives, and feta cheese, served with a tangy lemon-herb dressing for dipping.

For the Crust:
- 1 large cucumber, cut into 1-inch chunks
- 1 pint cherry tomatoes
- 1 red onion, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 cup pitted Kalamata olives
- 8 oz feta cheese, cut into 1-inch cubes
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp dried oregano
- 1 clove garlic, minced
- Salt and black pepper to taste
- Wooden or metal skewers
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper to make the dressing. Set aside.
- Thread cucumber, cherry tomatoes, red onion, bell pepper, olives, and feta cheese onto skewers in an alternating pattern.
- Arrange the skewers on a serving platter and drizzle with half of the dressing.
- Serve immediately with the remaining dressing on the side for dipping.
