Rich, fudgy chocolate cookies with gooey marshmallow centers, perfect for satisfying your sweet tooth.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 12 large marshmallows, halved

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
  4. Gradually mix in the dry ingredients until just combined, then fold in chocolate chips.
  5. Scoop tablespoon-sized portions of dough, flatten slightly, place a marshmallow half in the center, and wrap dough around it. Place on baking sheet.
  6. Bake for 10-12 minutes, until edges are set. Let cool on baking sheet for 5 minutes before transferring to a wire rack.
