For the Crust:
- 8 oz fusilli pasta
- 1 large ripe avocado, pitted and peeled
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh or frozen, thawed)
- 1/4 cup red onion, finely chopped
- 2 tbsp fresh lime juice
- 2 tbsp olive oil
- 1/4 cup fresh cilantro, chopped
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, mash the avocado with lime juice and olive oil until smooth and creamy.
- Add the cooled pasta, cherry tomatoes, corn, red onion, and cilantro to the bowl. Toss gently to coat everything in the avocado dressing.
- Season with salt and black pepper to taste. Serve immediately or chill until ready to serve.
