A creamy, refreshing pasta salad featuring ripe avocado, sweet corn, and juicy cherry tomatoes. Perfect for picnics or a quick lunch.

For the Crust:

  • 8 oz fusilli pasta
  • 1 large ripe avocado, pitted and peeled
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or frozen, thawed)
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, mash the avocado with lime juice and olive oil until smooth and creamy.
  3. Add the cooled pasta, cherry tomatoes, corn, red onion, and cilantro to the bowl. Toss gently to coat everything in the avocado dressing.
  4. Season with salt and black pepper to taste. Serve immediately or chill until ready to serve.
