Description

A simple one-pan meal with tender chicken, crispy potatoes, and fresh green beans, all seasoned and baked together for a fuss-free dinner.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 1 lb fresh green beans, trimmed
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon, sliced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss potatoes with 1 tbsp olive oil, half the garlic, oregano, paprika, salt, and pepper. Spread on one side of the baking sheet.
  3. In the same bowl, toss chicken with 1 tbsp olive oil and remaining seasonings. Place on the baking sheet next to the potatoes.
  4. Toss green beans with remaining 1 tbsp olive oil and garlic. Arrange on the baking sheet around the chicken and potatoes. Top with lemon slices.
  5. Bake for 25-30 minutes until chicken is cooked through (165°F internal temperature) and potatoes are tender. Serve warm.

Notes

You can customize the seasonings to taste.
