For the Crust:
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 2 cups cooked white or brown rice
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
1. Prepare the Crust:
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
- Add garlic and stir for 30 seconds until fragrant.
- Add bell pepper, broccoli, and carrot. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
- Pour in soy sauce, oyster sauce, and sesame oil. Toss everything to coat evenly and cook for another 2 minutes.
- Serve the stir-fry over cooked rice in bowls and garnish with sliced green onions.
