A quick and healthy stir-fry featuring tender chicken, crisp vegetables, and savory sauce served over fluffy rice.

For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 cups cooked white or brown rice
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

1. Prepare the Crust:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
  3. Add garlic and stir for 30 seconds until fragrant.
  4. Add bell pepper, broccoli, and carrot. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  5. Pour in soy sauce, oyster sauce, and sesame oil. Toss everything to coat evenly and cook for another 2 minutes.
  6. Serve the stir-fry over cooked rice in bowls and garnish with sliced green onions.

Notes

You can customize the seasonings to taste.
