For the Crust:
- 2 boneless, skinless chicken breasts, cubed
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, add diced onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Stir in the rice, paprika, thyme, salt, and pepper. Pour in chicken broth and bring to a simmer.
- Reduce heat to low, cover, and cook for 15-18 minutes until rice is tender and liquid is absorbed.
- Return the cooked chicken to the skillet. Pour in heavy cream, stir well, and simmer uncovered for 5 minutes until the sauce thickens slightly.
- Garnish with fresh parsley if desired and serve hot.
