For the Crust:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 (20 oz) package cheese tortellini
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Season chicken pieces with Italian seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, add garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer.
- Add tortellini to the skillet, reduce heat to medium, and cook according to package instructions until tender, about 8-10 minutes.
- Stir in Parmesan cheese until melted and sauce thickens slightly.
- Return chicken to the skillet and toss to coat in the sauce. Cook for 2-3 minutes until heated through.
- Garnish with fresh parsley and serve warm.
