For the Crust:
- 3 lb beef roast
- 1 cup cranberry sauce
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup beef broth
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Season beef roast with salt, pepper, and rosemary. Heat olive oil in a large oven-safe skillet and sear roast on all sides until browned.
- In a bowl, mix cranberry sauce, balsamic vinegar, minced garlic, and beef broth. Pour over the roast.
- Transfer skillet to the oven and roast for 25-30 minutes, or until internal temperature reaches 135°F for medium-rare. Baste occasionally with the sauce.
- Remove from oven, let rest for 10 minutes before slicing. Serve with the pan sauce drizzled over the top.
