For the Crust:

  • 3 lb beef roast
  • 1 cup cranberry sauce
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup beef broth

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Season beef roast with salt, pepper, and rosemary. Heat olive oil in a large oven-safe skillet and sear roast on all sides until browned.
  3. In a bowl, mix cranberry sauce, balsamic vinegar, minced garlic, and beef broth. Pour over the roast.
  4. Transfer skillet to the oven and roast for 25-30 minutes, or until internal temperature reaches 135°F for medium-rare. Baste occasionally with the sauce.
  5. Remove from oven, let rest for 10 minutes before slicing. Serve with the pan sauce drizzled over the top.
