For the Crust:
- 2 large English cucumbers, thinly sliced
- 8 oz fresh mozzarella cheese, sliced into rounds
- 1 cup fresh basil leaves, plus extra for garnish
- 1/4 cup extra virgin olive oil
- 2 tbsp balsamic glaze
- 1 clove garlic, minced
- 1 tsp honey
- Salt and freshly ground black pepper to taste
Instructions
1. Prepare the Crust:
- In a blender or food processor, combine the basil leaves, olive oil, minced garlic, honey, and a pinch of salt. Blend until smooth to create the basil essence.
- Arrange the cucumber and mozzarella slices alternately on a serving platter or individual plates.
- Drizzle the basil essence evenly over the arranged cucumber and mozzarella.
- Finish by drizzling the balsamic glaze over the top and season with salt and pepper.
- Garnish with additional fresh basil leaves and serve immediately.
