For the Crust:
- 1 pre-made pie crust
- 1 cup ricotta cheese
- 1 cup fresh spinach, chopped
- 4 large eggs
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Place pie crust in a 9-inch pie dish and prick the bottom with a fork.
- In a skillet, heat olive oil over medium heat. Add spinach and cook until wilted, about 2-3 minutes. Let cool.
- In a bowl, whisk together eggs, ricotta, heavy cream, Parmesan, nutmeg, salt, and pepper until smooth.
- Stir in the cooled spinach. Pour the mixture into the prepared pie crust.
- Bake for 30-35 minutes, or until the center is set and the top is golden. Let cool for 5 minutes before serving.
