A savory and comforting dish featuring tender chicken breasts cooked in a rich garlic butter sauce, served alongside a colorful medley of roasted broccoli and carrots.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup unsalted butter, divided
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 2 cups broccoli florets
  • 2 large carrots, sliced into rounds
  • 2 tablespoons olive oil
  • 1/4 cup chicken broth
  • 2 tablespoons fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Season chicken breasts with salt, pepper, thyme, and paprika.
  2. In a large oven-safe skillet, melt 2 tablespoons butter over medium-high heat. Add chicken and sear for 3-4 minutes per side until golden brown. Remove chicken and set aside.
  3. In the same skillet, add olive oil, broccoli, and carrots. Sauté for 5 minutes until slightly tender. Remove veggies and set aside.
  4. Reduce heat to medium. Add remaining butter and minced garlic to the skillet. Cook for 1-2 minutes until fragrant, then stir in chicken broth.
  5. Return chicken and veggies to the skillet, spooning garlic butter sauce over top. Transfer skillet to the oven and bake for 15-20 minutes, until chicken is cooked through.
  6. Garnish with fresh parsley and serve hot, drizzled with extra sauce from the skillet.

You can customize the seasonings to taste.
