For the Crust:
- 4 boneless, skinless chicken breasts
- 1/2 cup unsalted butter, divided
- 6 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and black pepper to taste
- 2 cups broccoli florets
- 2 large carrots, sliced into rounds
- 2 tablespoons olive oil
- 1/4 cup chicken broth
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Season chicken breasts with salt, pepper, thyme, and paprika.
- In a large oven-safe skillet, melt 2 tablespoons butter over medium-high heat. Add chicken and sear for 3-4 minutes per side until golden brown. Remove chicken and set aside.
- In the same skillet, add olive oil, broccoli, and carrots. Sauté for 5 minutes until slightly tender. Remove veggies and set aside.
- Reduce heat to medium. Add remaining butter and minced garlic to the skillet. Cook for 1-2 minutes until fragrant, then stir in chicken broth.
- Return chicken and veggies to the skillet, spooning garlic butter sauce over top. Transfer skillet to the oven and bake for 15-20 minutes, until chicken is cooked through.
- Garnish with fresh parsley and serve hot, drizzled with extra sauce from the skillet.
