For the Crust:
- 1 lb sweet Italian sausage, casings removed
- 2 large sweet potatoes, peeled and cubed
- 3 carrots, peeled and sliced
- 1 large onion, diced
- 2 cups apple cider
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
- 2 tbsp chopped fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
- Add onion and carrots to the pot and sauté until softened, about 5 minutes.
- Stir in sweet potatoes, apple cider, chicken broth, thyme, paprika, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 25-30 minutes, or until vegetables are tender.
- Use a potato masher to partially mash the stew, leaving some chunks for texture. Adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
