Description

Simple baguette slices are transformed into a vibrant, crowd-pleasing appetizer with a colorful topping of tomatoes, basil, and balsamic glaze.

For the Crust:

  • 1 French baguette, sliced into 1/2-inch pieces
  • 2 cups cherry tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and black pepper to taste
  • 1/4 cup shredded Parmesan cheese
  • Balsamic glaze for drizzling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil. Toast for 8-10 minutes until golden and crisp.
  2. In a medium bowl, combine diced cherry tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Mix gently.
  3. Spoon the tomato mixture generously over each toasted baguette slice. Top with a sprinkle of Parmesan cheese and a drizzle of balsamic glaze. Serve immediately.
