For the Crust:
- 1 French baguette, sliced into 1/2-inch pieces
- 2 cups cherry tomatoes, diced
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and black pepper to taste
- 1/4 cup shredded Parmesan cheese
- Balsamic glaze for drizzling
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil. Toast for 8-10 minutes until golden and crisp.
- In a medium bowl, combine diced cherry tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Mix gently.
- Spoon the tomato mixture generously over each toasted baguette slice. Top with a sprinkle of Parmesan cheese and a drizzle of balsamic glaze. Serve immediately.
