For the Crust:
- 8 oz cream cheese, softened
- 4 oz goat cheese, softened
- 1/2 cup shelled pistachios, finely chopped
- 1/3 cup dried cranberries, finely chopped
- 2 tbsp honey
- 1 tsp fresh rosemary, minced
- 1/4 tsp garlic powder
- Salt and black pepper to taste
- Star-shaped cookie cutter (optional)
Instructions
1. Prepare the Crust:
- In a medium bowl, combine cream cheese, goat cheese, honey, rosemary, garlic powder, salt, and pepper. Mix until smooth and well blended.
- Divide the cheese mixture into two equal portions. Shape each portion into a cone or tree shape, or use a star-shaped cookie cutter for uniform trees.
- On a plate, mix together chopped pistachios and dried cranberries. Roll each cheese tree in the mixture, pressing gently to coat evenly.
- Place the coated cheese trees on a serving platter. Refrigerate for at least 30 minutes to firm up before serving.
- Garnish with extra rosemary sprigs or a drizzle of honey if desired, and serve with crackers or sliced baguette.
