For the Crust:
- 1 can (15 oz) chickpeas, rinsed and drained
- 1/2 cup crumbled feta cheese
- 1/3 cup dried cranberries
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh parsley
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine chickpeas, feta cheese, dried cranberries, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
- Pour the vinaigrette over the chickpea mixture and toss gently to coat all ingredients.
