Description

A vibrant and tangy pasta salad featuring rigatoni, creamy feta, sweet cranberries, and a zesty lemon vinaigrette.


Ingredients

For the Crust:

  • 12 oz rigatoni pasta
  • 1 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tsp honey
  • 1 garlic clove, minced
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook the rigatoni according to package directions until al dente. Drain and rinse under cold water to cool.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, minced garlic, salt, and pepper to make the vinaigrette.
  3. In a large bowl, combine cooled rigatoni, feta cheese, cranberries, and parsley. Pour the vinaigrette over and toss gently to coat.

Notes

You can customize the seasonings to taste.
