For the Crust:
- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup diced red bell pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a 6-cup muffin tin.
- In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
- Stir in spinach, feta cheese, and diced red bell pepper.
- Pour the egg mixture evenly into the prepared muffin cups.
- Bake for 18-20 minutes, or until the egg cups are set and lightly golden on top.
- Let cool for a few minutes before removing from the tin. Serve warm.
