For the Crust:
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup breadcrumbs
- 1 tablespoon melted butter
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a skillet, heat olive oil over medium heat. Add garlic and spinach, cooking until spinach wilts. Remove from heat and stir in feta, oregano, salt, and pepper.
- Cut a pocket into each chicken breast, being careful not to cut all the way through. Stuff each breast with the spinach and feta mixture.
- Place stuffed chicken breasts in the baking dish. Combine breadcrumbs and melted butter, then sprinkle over the chicken.
- Bake for 25-30 minutes, or until chicken is cooked through and no longer pink inside. Let rest for 5 minutes before serving.
