For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Juice of 2 limes
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1 ripe avocado
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chopped cilantro
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Crust:
- In a bowl, mix olive oil, lime juice, chili powder, garlic powder, and salt. Marinate the chicken breasts in this mixture for at least 30 minutes.
- Preheat a grill or grill pan over medium-high heat. Grill chicken for 6-7 minutes on each side or until fully cooked.
- In a separate bowl, combine diced avocado, cherry tomatoes, chopped cilantro, lime juice, and black pepper to make the salsa. Top grilled chicken with the salsa before serving.
