For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Juice of 2 limes
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 ripe avocado
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the Crust:

  1. In a bowl, mix olive oil, lime juice, chili powder, garlic powder, and salt. Marinate the chicken breasts in this mixture for at least 30 minutes.
  2. Preheat a grill or grill pan over medium-high heat. Grill chicken for 6-7 minutes on each side or until fully cooked.
  3. In a separate bowl, combine diced avocado, cherry tomatoes, chopped cilantro, lime juice, and black pepper to make the salsa. Top grilled chicken with the salsa before serving.
