For the Crust:

  • 1 lb sirloin steak
  • 2 medium zucchinis, sliced lengthwise
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup sour cream
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Season the steak with salt, pepper, and smoked paprika, then grill over high heat for 4-5 minutes per side until desired doneness. Let rest before slicing.
  2. Toss zucchini slices with olive oil, salt, and pepper, then grill for 3-4 minutes per side until charred and tender.
  3. In a bowl, mix sour cream, minced garlic, and a pinch of salt to make the creamy garlic sauce.
  4. Combine cherry tomatoes, bell pepper, and red onion in a bowl for the fresh veggie medley.
  5. Assemble bowls with sliced steak, grilled zucchini, veggie medley, and a drizzle of creamy garlic sauce. Garnish with fresh parsley.
