For the Crust:
- 1 lb baby carrots
- 2 tbsp honey
- 1/2 cup sparkling water
- 1 tbsp lemon juice
- 4 oz goat cheese
- 2 tbsp heavy cream
- 1 tsp orange zest
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F. Toss carrots with honey, sparkling water, lemon juice, salt and pepper in a baking dish.
- Roast for 25 minutes, stirring occasionally, until carrots are tender and glaze is bubbly.
- While carrots cook, whip goat cheese with heavy cream and orange zest until light and fluffy. Dollop over carrots before serving.

You can customize the seasonings to taste.
