Description

A vibrant and healthy flatbread topped with creamy hummus, smoky grilled vegetables, and a sprinkle of fresh herbs for a burst of flavor.


Ingredients

For the Crust:

  • 2 large flatbreads
  • 1 cup hummus
  • 1 zucchini, sliced lengthwise
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 tbsp lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat grill or grill pan to medium-high heat.
  2. Toss zucchini, red bell pepper, and red onion with olive oil, smoked paprika, salt, and pepper. Grill for 3-4 minutes per side until tender and charred.
  3. Warm flatbreads on the grill for 1 minute per side.
  4. Spread hummus evenly over each flatbread.
  5. Top with grilled vegetables and sprinkle with fresh parsley, mint, and a drizzle of lemon juice.
  6. Slice and serve immediately.

Notes

You can customize the seasonings to taste.
