For the Crust:
- 2 large flatbreads
- 1 cup hummus
- 1 zucchini, sliced lengthwise
- 1 red bell pepper, sliced
- 1 small red onion, sliced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 tbsp lemon juice
Instructions
1. Prepare the Crust:
- Preheat grill or grill pan to medium-high heat.
- Toss zucchini, red bell pepper, and red onion with olive oil, smoked paprika, salt, and pepper. Grill for 3-4 minutes per side until tender and charred.
- Warm flatbreads on the grill for 1 minute per side.
- Spread hummus evenly over each flatbread.
- Top with grilled vegetables and sprinkle with fresh parsley, mint, and a drizzle of lemon juice.
- Slice and serve immediately.
