A high-protein, easy-to-make loaf that is flourless and guilt-free, packed with blueberries and cottage cheese for a nutritious treat.

For the Crust:
- 2 cups cottage cheese
- 3 large eggs
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 2 cups rolled oats
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1 cup fresh or frozen blueberries
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a blender, combine cottage cheese, eggs, honey, and vanilla extract. Blend until smooth.
- Add rolled oats, baking powder, and cinnamon to the blender. Blend again until well combined.
- Gently fold in blueberries by hand.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted comes out clean. Let cool before slicing.
