For the Crust:

  • 2 large oranges
  • 6 large eggs
  • 2 cups almond flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Place whole oranges in a pot, cover with water, and simmer for 2 hours until soft. Let cool, then blend into a smooth puree.
  2. Preheat oven to 350°F (175°C). Grease and line a 9-inch springform pan.
  3. In a large bowl, whisk eggs and sugar until pale and fluffy. Fold in almond flour, baking powder, salt, and vanilla.
  4. Stir in the orange puree until fully combined. Pour batter into prepared pan.
  5. Bake for 50–60 minutes until golden and a toothpick inserted comes out clean. Cool completely before dusting with powdered sugar.
