For the Crust:
- 2 large oranges
- 6 large eggs
- 2 cups almond flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Place whole oranges in a pot, cover with water, and simmer for 2 hours until soft. Let cool, then blend into a smooth puree.
- Preheat oven to 350°F (175°C). Grease and line a 9-inch springform pan.
- In a large bowl, whisk eggs and sugar until pale and fluffy. Fold in almond flour, baking powder, salt, and vanilla.
- Stir in the orange puree until fully combined. Pour batter into prepared pan.
- Bake for 50–60 minutes until golden and a toothpick inserted comes out clean. Cool completely before dusting with powdered sugar.
