Description

A light, zesty, and protein-packed cake made without flour, featuring the bright flavor of fresh lemons and the creamy texture of cottage cheese.

For the Crust:

  • 2 cups cottage cheese
  • 4 large eggs
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • Zest and juice of 2 lemons
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a blender, combine cottage cheese, eggs, honey, coconut oil, lemon zest, lemon juice, and vanilla. Blend until smooth.
  3. Add almond flour, baking powder, and salt to the blender. Pulse until just combined.
  4. Pour batter into the prepared pan and smooth the top.
  5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
