For the Crust:
- 2 cups cottage cheese
- 4 large eggs
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- Zest and juice of 2 lemons
- 1 teaspoon vanilla extract
- 1/2 cup almond flour
- 1 teaspoon baking powder
- Pinch of salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease an 8-inch round cake pan.
- In a blender, combine cottage cheese, eggs, honey, coconut oil, lemon zest, lemon juice, and vanilla. Blend until smooth.
- Add almond flour, baking powder, and salt to the blender. Pulse until just combined.
- Pour batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
