For the Crust:
- 2 large beets, roasted and finely diced
- 1 cup fresh spinach leaves
- 1/2 cup fresh basil leaves
- 1/2 cup fresh parsley
- 1/2 cup breadcrumbs
- 1/2 cup goat cheese, crumbled
- 1 egg, beaten
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a food processor, combine spinach, basil, parsley, breadcrumbs, garlic, olive oil, and Parmesan. Pulse until a coarse green paste forms. Season with salt and pepper.
- In a bowl, mix diced beets and goat cheese until well combined. Form into 4 equal-sized balls.
- Take a portion of the green herb mixture and flatten into a disc. Place a beet and cheese ball in the center and wrap the green mixture around it, sealing completely to form a shell.
- Place each shell on the baking sheet and brush lightly with beaten egg. Bake for 25-30 minutes until the shell is firm and golden.
- Let cool for 5 minutes before serving. Slice open to reveal the bleeding crimson center.
