Description

A visually striking and savory dish featuring a vibrant green spinach and herb crust encasing a juicy, crimson beet and goat cheese filling that oozes out when sliced.


Ingredients

For the Crust:

  • 2 large beets, roasted and finely diced
  • 1 cup fresh spinach leaves
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh parsley
  • 1/2 cup breadcrumbs
  • 1/2 cup goat cheese, crumbled
  • 1 egg, beaten
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a food processor, combine spinach, basil, parsley, breadcrumbs, garlic, olive oil, and Parmesan. Pulse until a coarse green paste forms. Season with salt and pepper.
  3. In a bowl, mix diced beets and goat cheese until well combined. Form into 4 equal-sized balls.
  4. Take a portion of the green herb mixture and flatten into a disc. Place a beet and cheese ball in the center and wrap the green mixture around it, sealing completely to form a shell.
  5. Place each shell on the baking sheet and brush lightly with beaten egg. Bake for 25-30 minutes until the shell is firm and golden.
  6. Let cool for 5 minutes before serving. Slice open to reveal the bleeding crimson center.
