- 2 cups shredded Gruyère cheese
- 1 cup shredded mozzarella cheese

Instructions
1. Prepare the Crust:
- In a large skillet or Dutch oven, heat butter and olive oil over medium-low heat until melted.
- Add sliced onions, salt, pepper, and sugar (if using). Stir to coat.
- Cook onions over low heat, stirring occasionally, for 40-45 minutes until deeply caramelized, golden brown, and tender. Adjust heat as needed to prevent burning.
- Preheat oven broiler to high. Transfer caramelized onions to an oven-safe dish or skillet.
- In a bowl, mix Gruyère, mozzarella, and Parmesan cheeses. Sprinkle evenly over the onions.
- Broil for 2-3 minutes until cheese is melted, bubbly, and slightly golden. Watch closely to avoid burning.
- Remove from oven, sprinkle with thyme (if using), and serve immediately with crusty bread or crackers.
