For the Crust:

  • 4 cups mixed greens (e.g., spinach, arugula, romaine)
  • 1 large apple (e.g., Honeycrisp or Fuji), thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup walnuts, toasted
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the mixed greens, sliced apple, crumbled feta, toasted walnuts, and red onion.
  2. In a small bowl, whisk together the olive oil, honey, apple cider vinegar, Dijon mustard, salt, and pepper until well blended.
