For the Crust:
- 2 cups seedless red grapes
- 1 tablespoon olive oil
- 1 teaspoon fresh rosemary, finely chopped
- 3 cups plain Greek yogurt
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- Pinch of sea salt
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Toss grapes with olive oil and rosemary, spread on a baking sheet, and roast for 20-25 minutes until burst and slightly caramelized. Let cool completely.
- In a bowl, mix Greek yogurt, honey, vanilla extract, and sea salt until smooth and well combined.
- Line a baking sheet with parchment paper. Spread the yogurt mixture evenly into a rectangle about 1/4-inch thick. Swirl in the cooled roasted grapes.
- Freeze for at least 4 hours or until solid. Break into pieces and serve immediately or store in an airtight container in the freezer.
