For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup white miso paste
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup salted caramel sauce
- 1/4 cup heavy cream
- Sea salt flakes for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together butter, miso paste, and brown sugar until smooth. Beat in egg and vanilla.
- Mix in flour, baking soda, and salt until a dough forms. Scoop tablespoon-sized balls onto the baking sheet, flatten slightly, and bake for 10-12 minutes until edges are golden. Let cool completely.
- In a small saucepan, warm caramel sauce with heavy cream over low heat, stirring until combined. Let cool to room temperature.
- Spread caramel onto the flat side of half the cookies, top with remaining cookies to form sandwiches, and press gently.
- Place sandwiches on a tray and freeze for at least 2 hours until firm. Sprinkle with sea salt flakes before serving.
