A decadent appetizer featuring warm, melty Camembert cheese on toasted crumpets, topped with sweet-tart cranberries, crunchy walnuts, and a spicy-sweet hot honey drizzle.

For the Crust:
- 4 crumpets, split in half
- 1 wheel (8 oz) Camembert cheese, rind on
- 4 tbsp unsalted butter, softened
- 3 cloves garlic, minced
- 1/4 cup dried cranberries
- 1/4 cup walnuts, roughly chopped and toasted
- 2 tbsp honey
- 1/2 tsp red pepper flakes
- 1 tbsp fresh thyme leaves
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Place crumpet halves on a baking sheet, cut side up.
- In a small bowl, mix softened butter with minced garlic, a pinch of salt, and black pepper. Spread garlic butter evenly over each crumpet half.
- Slice the top rind off the Camembert wheel and place it on a small oven-safe dish. Bake crumpets and Camembert for 10-12 minutes, until crumpets are golden and cheese is soft and bubbly.
- While baking, combine honey and red pepper flakes in a microwave-safe bowl. Microwave for 20-30 seconds until warm and slightly thinned. Stir to infuse.
- Toast walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant, then set aside.
- To assemble: Spread warm Camembert onto each garlic butter crumpet. Top with dried cranberries and toasted walnuts. Drizzle with hot honey and sprinkle with fresh thyme. Serve immediately.
