For the Crust:
- 2 cups broccoli florets
- 1 cup carrots, sliced
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Wash and prepare all vegetables: cut broccoli into florets, slice carrots, and slice mushrooms.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Add carrots and cook for 4-5 minutes until slightly tender.
- Add broccoli and mushrooms, season with thyme, salt, and pepper. Cook for 6-8 minutes, stirring occasionally, until vegetables are crisp-tender.
- Stir in remaining butter and fresh parsley. Toss to coat and serve warm.
