For the Crust:
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 2 cups broccoli florets
- 1 cup sliced mushrooms (such as cremini or shiitake)
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 tablespoon vegetable oil
- 1/2 cup chicken broth
- 1 teaspoon cornstarch mixed with 2 teaspoons water
- Cooked rice for serving
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add broccoli and mushrooms. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
- Add minced garlic and cook for 1 minute until fragrant. Return chicken to the skillet.
- In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, and chicken broth. Pour over the chicken and vegetables, stirring to combine.
- Bring to a simmer, then stir in cornstarch mixture. Cook for 1-2 minutes until sauce thickens. Season with salt and pepper.
- Serve immediately over cooked rice.
