For the Crust:
- 2 boneless, skinless chicken breasts, sliced
- 1 cup long-grain white rice
- 2 cups fresh spinach or kale
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Cook the rice according to package instructions and set aside.
- Heat olive oil in a large skillet over medium heat. Add chicken slices, season with salt, pepper, and paprika, and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in chicken broth and heavy cream, stirring to combine. Simmer for 5 minutes until slightly thickened.
- Return chicken to the skillet, stirring to coat in the garlic cream sauce. Cook for another 2-3 minutes.
- In a separate pan, lightly sauté the greens until wilted, about 2 minutes.
- Assemble bowls by dividing rice, greens, and chicken with sauce. Garnish with fresh parsley and serve warm.
