For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp dried thyme
- Salt and black pepper to taste
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 4 tbsp butter
- 6 medium carrots, peeled and sliced
- 2 tbsp olive oil
- 1 tsp honey
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, honey, salt, and pepper, then roast for 25-30 minutes until tender.
- Boil potatoes in salted water until soft, about 15 minutes. Drain, mash with milk and butter until fluffy, and season with salt and pepper.
- Season chicken breasts with salt, pepper, and thyme. Heat olive oil in a skillet over medium-high heat and cook chicken for 6-7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for 1 minute. Pour in chicken broth and heavy cream, simmer for 5 minutes until slightly thickened.
- Return chicken to the skillet, spoon sauce over, and cook for 2 more minutes. Serve chicken and sauce over mash with roasted carrots on the side, garnished with parsley.
