Description

A comforting and creamy chicken dish served with smooth mashed potatoes and sweet roasted carrots, perfect for a cozy dinner.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tbsp butter
  • 6 medium carrots, peeled and sliced
  • 2 tbsp olive oil
  • 1 tsp honey
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrots with olive oil, honey, salt, and pepper, then roast for 25-30 minutes until tender.
  2. Boil potatoes in salted water until soft, about 15 minutes. Drain, mash with milk and butter until fluffy, and season with salt and pepper.
  3. Season chicken breasts with salt, pepper, and thyme. Heat olive oil in a skillet over medium-high heat and cook chicken for 6-7 minutes per side until golden and cooked through. Remove and set aside.
  4. In the same skillet, add garlic and sauté for 1 minute. Pour in chicken broth and heavy cream, simmer for 5 minutes until slightly thickened.
  5. Return chicken to the skillet, spoon sauce over, and cook for 2 more minutes. Serve chicken and sauce over mash with roasted carrots on the side, garnished with parsley.
