For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 8 oz fettuccine pasta
- 2 cups sliced mushrooms
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Cook the fettuccine according to package instructions until al dente, then drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken cubes, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, add mushrooms and sauté until softened, about 5 minutes. Add minced garlic and cook for 1 minute until fragrant.
- Reduce heat to medium-low. Pour in heavy cream and stir in Parmesan cheese and dried thyme. Simmer for 3-4 minutes until sauce thickens slightly.
- Return cooked chicken to the skillet and add the drained pasta. Toss everything together until well coated and heated through.
- Garnish with fresh parsley and serve immediately.
