For the Crust:
- 1 lb large shrimp, peeled and deveined
- 2 cups uncooked jasmine rice
- 4 cups chicken broth
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh dill, chopped
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tsp paprika
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Cook the jasmine rice in chicken broth according to package instructions, then stir in chopped parsley and dill.
- In a large skillet, heat olive oil and butter over medium heat, then sauté minced garlic until fragrant.
- Add shrimp to the skillet, season with paprika, salt, and pepper, and cook until pink and opaque, about 3-4 minutes.
- Pour in heavy cream, reduce heat to low, and simmer for 5 minutes until the sauce thickens slightly.
- Serve the creamy garlic shrimp over the herb rice, garnished with additional fresh herbs if desired.
