A complete, flavorful dinner featuring flaky salmon with a garlic-herb crust, crispy roasted potatoes, and tender asparagus topped with melted Parmesan.

For the Crust:
- 4 salmon fillets (6 oz each)
- 1 lb baby potatoes, halved
- 1 lb asparagus, trimmed
- 3 tbsp olive oil, divided
- 4 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 1 tsp lemon zest
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1 lemon, sliced for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
- In a bowl, mix garlic, parsley, dill, lemon zest, 1 tbsp olive oil, salt, and pepper. Rub mixture over salmon fillets.
- Remove potatoes from oven, push to one side. Add asparagus to the sheet, drizzle with remaining 1 tbsp oil, season. Place salmon on the sheet.
- Return to oven and bake for 12-15 minutes until salmon is cooked and asparagus is tender. Sprinkle Parmesan over asparagus in the last 5 minutes.
- Serve salmon, potatoes, and asparagus together with lemon slices on the side.
