Description

A complete, flavorful dinner featuring tender salmon with a garlic-herb crust, crispy roasted potatoes, and cheesy baked asparagus.

For the Crust:

  • 4 salmon fillets (6 oz each)
  • 1.5 lbs baby potatoes, halved
  • 1 lb asparagus, trimmed
  • 3 tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon zest
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss potatoes with 1 tbsp olive oil, salt, and pepper; spread on a baking sheet and roast for 20 minutes.
  2. In a bowl, mix garlic, parsley, dill, lemon zest, 1 tbsp olive oil, salt, and pepper. Rub mixture over salmon fillets.
  3. After 20 minutes, push potatoes to one side of the sheet. Add salmon to the center and asparagus to the other side. Drizzle asparagus with remaining 1 tbsp oil, season with salt and pepper.
  4. Roast for 12-15 minutes until salmon is cooked through and asparagus is tender. Sprinkle Parmesan over asparagus in the last 5 minutes.
  5. Serve immediately, garnished with extra herbs if desired.

Notes

You can customize the seasonings to taste.
