For the Crust:
- 4 ears of corn
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1 lime
- Salt and pepper to taste
- 1/4 cup grated parmesan cheese
- Chopped fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat your oven to 400°F (200°C).
- Cut each ear of corn into 4 rib-like pieces by carefully slicing through the cob.
- In a small bowl, mix the olive oil, minced garlic, lime juice, salt, and pepper. Brush the mixture over the corn ribs.
- Place the corn ribs on a baking sheet and roast in the preheated oven for 25-30 minutes until tender and golden brown.
- Remove from oven and sprinkle with parmesan cheese and parsley before serving.
