Description

A low-carb, protein-packed pizza with a creamy cottage cheese crust, topped with garlicky spinach and melted mozzarella.


Ingredients

For the Crust:

  • 1 cup cottage cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix cottage cheese, egg, Parmesan, 1/2 cup mozzarella, garlic powder, oregano, salt, and pepper until well combined.
  3. Spread the mixture onto the prepared baking sheet into a 10-inch round crust. Bake for 20-25 minutes until golden and firm.
  4. While crust bakes, heat olive oil in a pan over medium heat. Sauté garlic until fragrant, then add spinach and cook until wilted. Season with salt and pepper.
  5. Remove crust from oven. Top with sautéed spinach and remaining mozzarella cheese. Bake for another 5-7 minutes until cheese is melted and bubbly.
  6. Let cool slightly before slicing and serving.

Notes

You can customize the seasonings to taste.
