A low-carb, protein-packed pizza with a creamy cottage cheese crust, topped with garlicky spinach and melted mozzarella.

For the Crust:
- 1 cup cottage cheese
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, mix cottage cheese, egg, Parmesan, 1/2 cup mozzarella, garlic powder, oregano, salt, and pepper until well combined.
- Spread the mixture onto the prepared baking sheet into a 10-inch round crust. Bake for 20-25 minutes until golden and firm.
- While crust bakes, heat olive oil in a pan over medium heat. Sauté garlic until fragrant, then add spinach and cook until wilted. Season with salt and pepper.
- Remove crust from oven. Top with sautéed spinach and remaining mozzarella cheese. Bake for another 5-7 minutes until cheese is melted and bubbly.
- Let cool slightly before slicing and serving.
