Description

A low-carb, protein-packed pizza with a creamy cottage cheese crust, topped with garlicky spinach and melty mozzarella.


Ingredients

For the Crust:

  • 1 cup cottage cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup almond flour
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a blender, combine cottage cheese, egg, Parmesan, almond flour, and Italian seasoning. Blend until smooth.
  3. Spread the batter onto the prepared baking sheet into a 10-inch circle. Bake for 15 minutes until firm and lightly golden.
  4. While crust bakes, heat olive oil in a skillet over medium heat. Add garlic and spinach, sauté until spinach wilts. Season with salt and pepper.
  5. Remove crust from oven. Top with sautéed spinach and garlic, then sprinkle mozzarella evenly over the top.
  6. Return to oven and bake for 10-12 minutes until cheese is melted and bubbly. Slice and serve warm.

Notes

You can customize the seasonings to taste.
