A low-carb, protein-packed pizza with a creamy cottage cheese crust, topped with garlicky spinach and melty mozzarella.

For the Crust:
- 1 cup cottage cheese
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 1/2 cup almond flour
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a blender, combine cottage cheese, egg, Parmesan, almond flour, and Italian seasoning. Blend until smooth.
- Spread the batter onto the prepared baking sheet into a 10-inch circle. Bake for 15 minutes until firm and lightly golden.
- While crust bakes, heat olive oil in a skillet over medium heat. Add garlic and spinach, sauté until spinach wilts. Season with salt and pepper.
- Remove crust from oven. Top with sautéed spinach and garlic, then sprinkle mozzarella evenly over the top.
- Return to oven and bake for 10-12 minutes until cheese is melted and bubbly. Slice and serve warm.
