For the Crust:
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese
- 1 egg
- 2 cloves garlic, minced
- 1 cup fresh spinach leaves
- 1/2 cup ricotta cheese
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C).
- In a bowl, mix cottage cheese, half of the mozzarella, and the egg until combined.
- Spread the cottage cheese mixture onto a baking sheet lined with parchment paper, forming a crust.
- Bake the crust for 15 minutes. Meanwhile, sauté garlic in a pan and add spinach until wilted.
- Spread ricotta cheese over the crust, then add the sautéed spinach and garlic.
- Top with the remaining mozzarella cheese and season with salt and pepper.
- Bake for an additional 15 minutes or until the cheese is melted and bubbly.
