For the Crust:
- 1.5 lbs fresh carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 2 tbsp pure maple syrup
- 1 tsp grated fresh ginger
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 tbsp unsalted butter, softened
- 2 tbsp dried cranberries, finely chopped
- 1 tsp fresh thyme leaves
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss carrots with olive oil, maple syrup, ginger, salt, and pepper. Spread in a single layer on the baking sheet.
- Roast for 25-30 minutes, flipping halfway, until carrots are tender and caramelized.
- While carrots roast, mix softened butter, cranberries, and thyme in a small bowl until combined. Chill until ready to serve.
- Serve roasted carrots warm, topped with dollops of cranberry butter.
