For the Crust:
- 1 cup all-purpose flour
- 1 tsp ground ginger
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/2 cup molasses
- 1/4 cup brown sugar
- 1/2 cup hot water
- 1/2 tsp baking soda
- 8 oz mascarpone cheese
- 1/2 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan.
- In a bowl, whisk together flour, ginger, cinnamon, nutmeg, and cloves. In another bowl, mix molasses, brown sugar, hot water, and baking soda. Combine wet and dry ingredients, then pour into pan. Bake for 20-25 minutes, until a toothpick comes out clean. Let cool, then crumble.
- In a separate bowl, beat mascarpone, heavy cream, powdered sugar, and vanilla until smooth and fluffy.
- Layer crumbled gingerbread and mascarpone cream in serving cups. Repeat layers and chill for at least 1 hour before serving.
