A vibrant and elegant dish featuring roasted beets glazed in a sweet-tangy sauce, served over creamy whipped goat cheese and finished with a warm spiced maple drizzle.

For the Crust:

  • 4 medium beets, peeled and quartered
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 4 ounces goat cheese, softened
  • 1/4 cup heavy cream
  • 1 tablespoon honey
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon balsamic vinegar
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss beets with olive oil, salt, and pepper, then roast on a baking sheet for 25-30 minutes until tender.
  2. While beets roast, whip goat cheese with heavy cream and honey in a bowl until smooth and fluffy. Spread onto serving plates.
  3. In a small saucepan, warm maple syrup with cinnamon and nutmeg over low heat for 5 minutes. Stir in balsamic vinegar and remove from heat.
  4. Toss roasted beets in half of the spiced maple glaze until coated.
  5. Arrange glazed beets over whipped goat cheese. Drizzle with remaining glaze and garnish with fresh thyme.
