For the Crust:
- 4 medium beets, peeled and quartered
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 4 ounces goat cheese, softened
- 1/4 cup heavy cream
- 1 tablespoon honey
- 1/4 cup pure maple syrup
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon balsamic vinegar
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss beets with olive oil, salt, and pepper, then roast on a baking sheet for 25-30 minutes until tender.
- While beets roast, whip goat cheese with heavy cream and honey in a bowl until smooth and fluffy. Spread onto serving plates.
- In a small saucepan, warm maple syrup with cinnamon and nutmeg over low heat for 5 minutes. Stir in balsamic vinegar and remove from heat.
- Toss roasted beets in half of the spiced maple glaze until coated.
- Arrange glazed beets over whipped goat cheese. Drizzle with remaining glaze and garnish with fresh thyme.
