For the Crust:

  • 2 boneless, skinless chicken breasts, diced
  • 1 cup brown rice, cooked
  • 2 cups mixed greens (e.g., spinach, kale)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ginger powder
  • 1 avocado, sliced
  • 1/4 cup sliced almonds
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook brown rice according to package instructions and set aside.
  2. In a bowl, mix soy sauce, honey, minced garlic, and ginger powder to create the glaze.
  3. Heat olive oil in a pan over medium heat, add diced chicken, and cook until browned.
  4. Pour the glaze over the chicken and simmer for 5-7 minutes until the sauce thickens.
  5. Assemble bowls by layering cooked rice, mixed greens, glazed chicken, avocado slices, and almonds.
  6. Season with salt and pepper and serve warm.
