Description

Buttery, crumbly shortbread cookies infused with bright lemon zest and topped with a sweet lemon glaze, shaped like festive trees.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • Green food coloring (optional)
  • Sprinkles for decorating (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Mix in lemon zest.
  3. Gradually add flour and salt, mixing until a soft dough forms. If dough is sticky, chill for 15 minutes.
  4. Roll dough to 1/4-inch thickness on a floured surface. Use tree-shaped cookie cutters to cut out cookies and place on prepared baking sheets.
  5. Bake for 12-15 minutes, until edges are lightly golden. Cool completely on a wire rack.
  6. Whisk powdered sugar and lemon juice until smooth. Add food coloring if desired. Drizzle or spread glaze over cooled cookies and decorate with sprinkles.
