A creamy goat cheese log rolled in sweet dried cranberries and crunchy pistachios, perfect for holiday gatherings or as an elegant appetizer.

For the Crust:

  • 8 oz goat cheese, softened
  • 1/4 cup dried cranberries, finely chopped
  • 1/4 cup shelled pistachios, finely chopped
  • 1 tbsp honey
  • 1 tsp fresh thyme leaves
  • 1/4 tsp black pepper
  • Crackers or sliced baguette for serving

Instructions

1. Prepare the Crust:

  1. In a medium bowl, combine softened goat cheese, honey, thyme, and black pepper. Mix until smooth and well combined.
  2. Lay a sheet of plastic wrap on a flat surface. Transfer the goat cheese mixture to the center and shape into a log, about 6 inches long.
  3. Sprinkle chopped cranberries and pistachios onto the plastic wrap, then roll the goat cheese log in the mixture until evenly coated.
  4. Wrap the log tightly in plastic wrap and refrigerate for at least 30 minutes to firm up.
  5. Unwrap the log, place on a serving plate, and serve with crackers or sliced baguette.

Notes

You can customize the seasonings to taste.
