Description

Tender chicken breasts filled with creamy goat cheese, spinach, and herbs, then pan-seared and baked to perfection.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 4 oz goat cheese, softened
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh basil, chopped
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix goat cheese, spinach, garlic, basil, salt, and pepper until well combined.
  3. Slice a pocket into each chicken breast horizontally, being careful not to cut all the way through.
  4. Stuff each chicken breast with the goat cheese mixture and secure with toothpicks if needed.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
  6. Transfer skillet to the oven and bake for 20-25 minutes, or until chicken reaches 165°F (74°C) internally.
  7. Let rest for 5 minutes before serving.
